Four Compound Butters for Every Season

There are some things in the kitchen that never seem to go out of style, and compound butter is one of them.

Years ago I became completely enamored with flavored butters for the simple elegance they brought to the table. A slice of butter resting on warm bread, melting over grilled vegetables, or slowly disappearing into a perfectly cooked steak always felt like such a thoughtful finishing touch. It was one of those small details that made an everyday meal feel just a little more special.

What surprised me even more was how practical they were.

Spend one afternoon mixing a few fresh ingredients into softened butter, and you'll have beautiful compound butters tucked away in the freezer for months, ready whenever inspiration strikes. Instead of scrambling for fresh herbs or another finishing touch every time I wanted an extra layer of flavor, everything was already waiting for me.

And perhaps my favorite thing about them is their versatility.

Every butter in this collection is meant to be delicious simply spread over a piece of warm crusty bread. But that same butter can be sliced from the freezer and melted into pasta or polenta, spooned over fish or chicken, tucked into a baked potato, or allowed to melt over roasted vegetables.

Over the years I also stumbled across a wonderfully simple trick that completely changed how I make them. Rather than rolling the butter in plastic wrap, I line sturdy cardboard craft tubes with parchment paper before packing them with the butter mixture. The tubes protect the butter while it chills, create perfectly round logs that slice beautifully, and make freezer storage surprisingly tidy. Once the butter has firmed up, I simply peel away the cardboard, wrap the log in fresh parchment, and return it to the refrigerator or freezer until I'm ready to use it.

It's one of those little kitchen discoveries that makes you wonder why you didn't think of it sooner!

One Simple Technique

Allow the butter to soften until easily spreadable, then finely chop or grate your flavoring ingredients.

Combine everything in a bowl and mix thoroughly with a fork, wooden spoon, or hand mixer until evenly incorporated. A mixer will give you a slightly lighter, more whipped texture, while mixing by hand keeps things wonderfully simple.

Shape the finished butter into a parchment-wrapped log or pack it into parchment-lined cardboard tubes. Chill until firm, then slice as needed.

Storage

Wrap finished butter logs tightly in parchment paper and refrigerate or freeze.

They freeze beautifully for up to six months, making it easy to keep several flavors on hand.
