A pasta dish thirty years in the making.
Every once in a while, a recipe follows you through life.
This one certainly did.
About thirty years ago (yes... I'm dating myself), I was living in Seattle and working downtown. During lunch one afternoon I wandered into a little neighborhood restaurant called Pasta & Co. It wasn't much more than a cozy storefront at the time, but it quickly became one of my favorite places.
One dish completely captured my attention.
A simple radiatore pasta tossed in a vibrant basil sauce.
It was served cold in little takeout containers, and more days than I care to admit, that became lunch. I looked forward to it every week. There was something about the texture of the pasta, the way every ridge held onto the basil sauce, that made it unlike anything else I'd eaten.
I was hooked!
Over the years I tried to recreate that pasta countless times.
Sometimes it came close.
Most of the time... it didn't.
For years I assumed all radiatore pasta was basically the same.
It isn't.
That was probably the biggest lesson in finally recreating this dish.
Finding the Right Radiatore Pasta
After trying brand after brand, I eventually discovered Etto Pastificio’s Radiatori, an artisan pasta that has completely changed the way I think about this shape.
The difference is immediately noticeable. Etto’s Radiatori have a wonderful density and texture, cooking beautifully while retaining that satisfying al dente bite. More importantly, the distinctive ridges and folds hold their shape and capture sauces, vegetables, and the flavorful preparations from my Studio Pantry exceptionally well.
Radiatori have become one of the pastas I reach for again and again, particularly for the simple compositions I make in the Studio Kitchen. A spoonful of Green Gold, a puck of Woodland Mushroom Butter, roasted vegetables, or a little grated Cougar Gold can settle into all those wonderful folds and turn a handful of ingredients into dinner.
Living here in the northern Idaho mountains, I don’t have the luxury of wandering into specialty Italian markets, so discovering Etto was a particularly welcome find. I order it directly and keep several shapes in my pantry, but Radiatori has earned a permanent place among my Foundations—one of those ingredients I never want to be without.

Coming Full Circle - Radiatore Pasta with Basil & Parmesan
When I created Green Gold for the Studio Pantry, this recipe was always in the back of my mind.
The concentrated basil flavor is exactly what I had been searching for all those years.
After years of experimenting, I finally arrived at a version that feels like home. Maybe even better than I remembered.
The secret isn't complicated.

Of course, Green Gold provides the fresh basil foundation, but there are two other little details that completely transform the sauce.
First, reserve some of the pasta water before draining.
Those few tablespoons of starchy water help create a silky sauce that clings beautifully to every ridge of the pasta.
Second, don't simply pour cream into the pan and hope for the best.
Warm the cream gently with the basil concentrate, then finish everything together with the cooked pasta. As the pasta absorbs the sauce, something magical happens. The Parmesan melts in, the cream becomes velvety, and every piece of radiatore is coated instead of swimming in sauce.
Simple techniques.
Big difference.

A Recipe That Changes with the Seasons
Although I make this recipe exactly as written most of the time, it’s also wonderfully adaptable. Feel free to add more Green Gold or extra Parmesan to suit your taste.
Roasted mushrooms are one of my favorite additions, or sometimes a puck of Woodland Mushroom Butter from the freezer adds just the right amount of earthy richness.
Roasted asparagus is wonderful when it’s in season, as are zucchini or other vegetables I happen to have on hand.
A handful of toasted pine nuts never hurts, and a generous shower of freshly grated Parmesan is almost always the finishing touch.
Each version feels just a little different while still tasting unmistakably familiar.
This is one of those recipes I often double, whether I’m feeding family and friends or simply looking forward to enjoying the leftovers over the next few days.

This one has traveled with me from a little lunch spot in downtown Seattle to my Studio Kitchen in northern Idaho.
